A 170 mm Gyuto knife. Blade is handforged from 15n20 steel, brut-de-forge finish. Octagonal handle is made of high quality Oak wood, harvested in Poland. Charred and oiled for unique look and improved water resistance. Burned finish also gives a fantastic texture to grip. Heirloom fitted brass guard adds to the rustic, handmade aesthetic. Blade has a hollow grind, with 2.5 mm thickness at the heel and tapering up to 1.6 mm at the tip. The edge is extremely sharp, and combining this with its geometry it makes for an overall workhorse of a knife. Very pleasant to grip and fantastic to use.
